Learn two different methods for cooking chuck roast, "poor man's brisket" that can be used in tacos and sandwiches or sliced.  This class focuses on techniques to roast on a charcoal grill or pellet smoker, and methods using a crock pot.

Each guest will sample the roast and assemble a modified taco birria.

This is an intermediate level class and contains gluten, meat, and dairy depending on taco selections.

PoCamp Joe started out watching cooking in his grandma's and momma's kitchens within the foothills of North Carolina.  Learning the meaning of "right smart" and "a pinch" has led him to become an award-winning BBQ Cook.  He has a love and passion to make taste buds, say, "Oh yeah, that's good".
